The article describes the project promoted by Fisr (Fondo Integrativo Speciale Ricerca) and by Imont on methods and systems for the increase of the traditional mountain food value added. The awareness of cultural, economic and ecologic value of mountain productions is the starting point of the project. The aim of the project is to create innovative technological production processes, production chains, marketing and logistic models that can assure the economic self-sustainability of the mountain regions. The project described in the article presents a high level of interdisciplinarity and it is based on five phases: 1. mapping of the traditional mountain food products of the italian territory and selection of significant study cases; 2. analysis of the technologic, production, logistic, legal and economic problems of the selected study cases and development of an inquires model of the agricultural and food mountain products; 3. put into practice of the solutions found to the technologic, production, logistic, legal and economic problems of the selected study cases; 4. definition of norms, marketing and economic solutions; 5. communication and dissemination of the results. The project described in the article and the methodology to implement it present a good level of innovation potential and can be transferred to other mountain regions.
